Proper home winemaking is achieved by making wine from grapes, and not from buying ready-made kits from the wine supplies shop, and then adding water! Yes, this is much easier to do, but there's absolutely no skill in it at all - so let's make real wine!

Making wine at home can be very successful and rewarding providing you adhere to some basic winemaking rules. It is not just a matter of squeezing some grapes, fermenting them and then bottling them in a hurry, and without a care just to get your alcohol buzz. What is important throughout the entire process is attention to detail - this means that you must undertake the following courses of action.

Make sure that the grapes are fully ripened, so don't pick the grapes too soon or there will be an imbalance of sugar to natural acid. Consequently, don't leave them on the vine too long as the imbalance will be the other way - not enough natural acid will mean the wine will not age. (i.e. too much sugar added to an unripe sample will result in a wine that is 'out of balance' or too high an alcohol level for the desired style). STICK CLOSELY TO RECIPES. Regular tasting during the ferment ensures that you are aware of what is going on, and any problem can be spotted quickly, and action taken. This is what winemaking is all about, teaching your palate to detect defects in the young wines. Practice will make perfect as you learn about what shouldn't be happening in the fermentation just as much as what should be. After fermentation when the new wine needs to be racked (removal of wine off the dead yeast cells or lees) keep contact with air to a minimum. Failure to do this will increase the chances of oxidation taking place. An oxidised wine is foul to taste, and most probably will have to be discarded. Use good, sterilized bottles at bottling time, and seal with high quality corks where possible - this will allow you to lay your wine down for many years if required.

Do this and you are well on the way to becoming a competent home winemaker. Also, remember that in the winemaking arena, one tends to learn more from ones mistakes rather than ones successes. So each subsequent vintage should get better and better.

Chocolates are everyone's favorite. The best chocolates are obviously expensive and cannot be bought off the shelf every time (specially in recessional times like now!). Yet what do you do to satiate your craving for that sinful bite of one of your favorite chocolate?

Chocolate Making:

Ingredients Required:

Butter, Cocoa Powder, Drinking Chocolate

Additionals - Dry Fruits, Waffle wafers, Nuts

1) Take a sauce pan and melt 2 tablespoons of butter (salted butter would do if you don;t mind a hint of salt in your chocolates! Else of course, go for unsalted white butter)

2) Add 4 tablespoons of Cocoa powder and stir to form a smooth paste (Be careful not to let it form lumps)

3) Now add 6 tablespoons of Drinking Chocolate to this and stir again

4) If the mixture is too hard to stir, add a few drops of milk to just make it smooth (Maintain the consistency by stirring along as you add milk drops)

5) Stir slowly and let the mixture get thick and bit sticky

6) Add a teaspoon of your own flavor (vanilla, orange, butterscotch, cinnamon etc). This can be omitted if you want it just plain dark chocolate

7) You can add almonds / cashews/ raisins / peanuts / wafers to create your own version of chocolate

8) Set it into a greased moulds and refrigerate for an hour

After an hour it will be ready to eat. This can be easily stored for up to a week!!

Christmas Cookie Recipes - Santa Face Cookies

Santa Claus pays a visit to your table in these delightfully cute cookies.

1 cup butter

Homemade Cookies

1/2 cup sugar

1/2 cup brown sugar

2 tablespoons milk

1 teaspoon vanilla extract

2 1/2 cups flour plus additional for rolling

Royal Packaged Icing Mix

Red food coloring

Pastel candy dots

Directions

Preheat oven to 375 degrees.

Place butter in a bowl and cream until nice and fluffy. Gradually beat in sugar and brown sugar until light and fluffy. Mix in the milk and vanilla. Add in flour; mix thoroughly. Chill dough for 1 to 2 hours or until it is easy to handle.

Work with 1/3 of the dough at a time and leave rest in the refrigerator until ready to use.

On a lightly floured surface, roll out dough to 1/4-inch thickness. Take a Santa shaped cookie cutter and dip it into flour, then cut out Santa faces. Place cookies on an ungreased cookie sheet.

Bake for 10 to 12 minutes or until just golden brown. Let cool on cookie sheet for 1 minute. Remove from cookie sheet and cool completely.

Prepare the royal icing according to package directions. Color half the icing red and leave the other half the original color. Using a icing bag or plastic bag with a hole cut in it, pipe a red Santa hat on each cookie. Follow up with white icing for Santa's beard, eyes and hat pompom.

Place a candy decoration in the center of each white eye. Allow icing to set before serving.

Makes 18 to 24 cookies.

To decorate: Place two chocolate chips on one end of cookies for eyes. Place baking bits down middle for buttons. For arms, dip ends of two pretzel stick halves into coating; attach one to each side.

Let stand until hardened. Pipe nose and scarf with gel or frosting.

Makes 32 cookies.

Directions

Preheat oven to 350 degrees.

In a separate bowl, combine the flour and salt; gradually add to creamed mixture.

Divide the dough into two sections. Tint one section red. Divide the dough into four sections. You should have two red sections and two regular sections. Cover and refrigerate for 1 hour.

Shape each section into a 9-inch log. Place one plain log next to one red log. Gently twist the plain and red logs together and create one swirled log. Repeat with the other two logs.

Cut each log into nine slices; roll each slice into a ball. Place each slice 1-inch apart onto an ungreased cookie sheet. Flatten slightly with a glass.

Bake 10 to 12 minutes, or until edges are lightly browned. Press a chocolate kiss candy piece into each cookie center, while cookies are still warm. Let cool.

Makes 36 cookies.

Easy Homemade Chocolate Truffles - Melt Someone's Heart Today

I always think of my sister any time I see chocolate truffles on display. I have given these as a gift to her many times and she's always thrilled when she opens the package. I, however, wanted to try my hand at making a batch of easy homemade chocolate truffles and get her opinion, since she's the number one chocoholic that I know. I took them to her for a taste test and needless to say, I didn't get to bring any home with me!

This recipe is so quick and easy you don't need a special occasion to enjoy them.

Easy Homemade Chocolate Truffles

3/4 cup butter
3/4 cup cocoa powder
1 (14oz) can sweetened condensed milk
1 Tablespoonful vanilla or almond extract
Cocoa powder (optional)
Chocolate sprinkles (optional)

In a heavy saucepan on low heat, melt butter. Add cocoa powder and stir until blended. Mix in sweetened condensed milk. Stir until thick and shiny - around 4 minutes or so.

Remove from heat and stir in the extract. Chill around 3-4 hours. When cool shape into balls. You may roll the balls into either the cocoa powder or chocolate sprinkles for an extra chocolate kick.

Chill 1-2 hours and keep refrigerated until ready to enjoy!

I still buy her a pretty box full of store-bought fancy truffles on occasion, but she's just as excited to get a batch of these. Truffles can be quite expensive in a chocolate shop. A batch of these can be made for half, if not less then half the price of a pound of store-bought truffles, depending on where you shop.

How to Make Homemade Rolled Fondant

Fondant is a type of cake decorating icing that is comprised mostly of confectioners' sugar and gelatin. It's much like a chewy, creamy sugar paste. Fondant is very popular with cake decorators because of its versatility and smooth, silky appearance. While it can be pretty difficult to get a perfectly smooth finish with a spatula and regular frosting, fondant makes the job much easier.

Besides its main use for covering entire cakes, fondant can also be used for covering cookies and cupcakes. Fondant can also be shaped into edible shapes and figures. When used for cakes, fondant tends to seal in freshness and is popular for weddings and outdoor events because the cake usually holds up better during hot or humid conditions for short periods of time.

Homemade Cookies

You can find ready-made fondant online and at many cake decorating stores. While this option is less time-consuming, most people agree that the store-bought variety is also less tasty. If you're facing a time crunch and understand that most people will peel off your fondant so they can eat your cake, buying ready-made fondant might be a good choice. However, if you have some extra time and would rather have people eat your entire work of art, it's probably worth it to make your fondant from scratch.

First, gather the following ingredients:

¼ oz. package unflavored gelatin
3 tablespoons cold water
½ cup corn syrup
1 tablespoon glycerin
2 tablespoons vegetable shortening
1 teaspoon clear pure vanilla extract
8 cups sifted confectioners' sugar (you may not use all 8 cups)

Mix together the gelatin and cold water in a medium bowl and let the mixture stand. Once it starts to thicken, transfer the mixture to a double boiler and stir continuously over medium heat until the gelatin is completely dissolved. Now, add the corn syrup and glycerin until all ingredients are completely mixed. Stir in the shortening and right before it looks like the shortening has completely melted, remove from the heat and stir in the vanilla. If you want to color your fondant you should add that with the vanilla. You can also substitute different flavors for the vanilla. Now, let the mixture cool until it reaches about 90 degrees F.

Once the mixture has cooled, place 4 cups of the confectioners' sugar in a large bowl. Using a wooden spoon, make a well in the center of the sugar and pour the mixture in the center. Gradually pull the sugar from the edge of the bowl into the mixture until it all becomes incorporated. If the mixture seems extremely sticky add ½ cup sugar at a time.

Spread a layer of shortening onto your work surface and transfer the fondant so you can start kneading the mixture by hand. You want to knead the fondant until it feels smooth, workable, and doesn't stick to your hands. If you think it feels too soft, add more sugar. If it feels too stiff, add one drop of water at a time. You can use the fondant right away or store it in an air tight container in the refrigerator. Make sure whenever you're ready, that the fondant is brought to room temperature and kneaded until it's soft and pliable again. Your fondant is now ready to be rolled and placed onto your cake.

Now For The Fun Part Learning How To Make Homemade Candles

Now that you have all that you need you are ready to start making your very first homemade candles. As you may have gathered we are going to be making bees wax candles, the reason I chose the bees wax candle is because it's simple, quick and ideal for beginners.

To start of you are going to take your sheet of wax and fold it in half, after folding the bees wax you are going to unfold it, and you will now have a line down the middle of the sheet of wax. Using your scissors cut the wax into two, when cutting make sure you cut along the line that you made by folding the bees wax. You should now have two sheets of even sized wax.

Take one of the bees wax sheets and place it on a flat clean and even surface, You are now going to get one of your long cotton candle wicks and place it onto the bees wax were you had cut. The cotton candle wick should be sticking out the bottom and the top of the sheet of wax, now using your finger tips slowly but tightly roll the end of the wax around the candle wick and continue to do this till you have formed a candle. The heat from your hand will help to seal the candle. Now press along the edges of the candle to help make sure they are sealed.

Its time to get your scissors again and you are now going to trim the candle wick, make sure that you cut the candle wick flush at the bottom of the candle, and on top you are going to cut the candle wick so that it is at least 7mm long. Now take the candle and turn it on its side on a flat even surface, and roll it using the palms of your hands this is just to make sure that the candle is well sealed.

Now you are going to take the second sheet of bees wax and repeat the above process. And there you have it you have just learned how to make homemade candles.

How to Make a Simple Homemade Aeroponics System

The main problem I have always had with building a homemade aeroponics system is the clogging spray nozzles. I was in a hydroponics supply store the other day when it occurred to me the aeroponics system I was looking at did not use any spray heads. As I looked over the new hydroponic gardening system, I marveled at how simple the design really was. With the right pump and correct assembly, the following homemade aeroponics system is relatively problem free.

There are four main parts to this simple system. There is a 20 gallon (75 liter) reservoir. There are several channels 4 or 6 inches in diameter and several feet long. Every 6 or 8 inches there is a hole drilled into the channel to accomodate a plant. The channels are pitched to allow drainage back to the reservoir. Next is a 1/2 inch line, run down the center of each channel and capped at the end. All the lines are connected at the other end by a manifold. Finally, the manifold attaches to a pump. At any point along the 1/2 line where spray is desired a 1/16 inch drill bit is used to cleanly make a small hole (usually one between each plant site).

Homemade

First, 1/2 inch PVC is cut to length and capped at one end. Spray locations are marked and drilled into the 1/2 inch PVC. A 1/2 inch line is run through the length of each channel, which is made from 4 or 6 inch PVC. The line is held in place by drilling two small holes and fastening a zip tie every few feet.

One end of each channel will have to be sealed with an end cap. The other end may be sealed or left open, depending on how drainage back to the reservoir is to be accomplished. 2 1/2 or 3 inch holes are cut every 6 to 8 inches in the channel to accomodate netted pots (or other planting containers).

At one end of the homemade aeroponics system, the 1/2 inch lines elbow out of their channels and are joined together by a series of "T" fittings. This is known as the manifold. One end of the manifold is left open to connect to the pump. Your pump may be an external pump or you may use a submersible pump. Either way, the pump needs to be able to deliver a water pressure of 45 to 60 psi to each of the 1/2 inch lines coming from the manifold.

Finally, any large, cheap, plastic storage tote may be used for the nutrient reservoir. A homemade aeroponics system with 24 to 36 plant sites would require a 20 gallon (75 liter) reservoir. It is always best to choose a dark tote, to keep as much light from the nutrient reservoir as possible. This will prevent algae growth and therefore help prevent fungus gnats. Whenever constructing a homemade hydroponics system you should always use PVC, and not CPVC. CPVC is known to slowly leach harmful chemicals. To prevent leaks, be sure to use PVC cleaner on all parts BEFORE you apply PVC glue and join the parts.

Blow up a small balloon (as big as you want your ornament to be) and cover with fabric stiffener. Wrap colorful string or yarn around the balloon until it's almost all covered. Let it dry and pop the balloon. Put a hanger on top and add small festive decorations to your ornament.

One alternative for this ornament is to leave an opening when you're covering it with string. When you've popped the balloon, hot glue lace or trim around the edges of the opening. Inside the ornament set up a small nativity scene, or other Christmasy theme. You can also make the balloon larger and use this ornament as a tabletop decoration.

Homemade Chocolate Chip Cookies - A Little History

There's nothing that makes a person feel more at home than homemade chocolate chip cookies (CCC). It's the kind of treat most kids grew up loving and it's the kind of treat that most people consider as their comfort food.

The thought of homemade chocolate chip cookies almost always bring a smile to most people not only because of how good they taste but because of how it became a part of their growing up.

The popularity attached to the restaurant wasn't only because of the tasty meals but it was also due to Ruth's policy to offer her customers an extra helping of entrées for them to take home along with her homemade cookies as dessert.

Ruth wrote a cookbook entitled Toll House Tried and True Recipes, which came out in 1936. In it was the recipe for the "Toll House Chocolate Crunch Cookie", which immediately became everyone's favorite homemade cookie.

Today, there are different ways to bake (CCC).

One can bake a batch with large chunks of chocolate chips or small ones. There are chocolate chip cookies with almonds to give it a different twist and there are even chocolate chip cookies with spices that will definitely make any mouth water with delight.

Homemade Halloween Costumes

Remember the days when you didn't buy your kids Halloween costumes?  Instead, Moms (or kids) would make the costumes! Usually it would be something simple like a ghost or a hobo, and the kids were satisfied with that. If you had a mom who had a little time and some sewing skills, sometimes they'd be more elaborate. I remember one year our mom made my older brother a hot dog costume! The year before that, he was a Christmas Tree!

These days though, our children are much more demanding. They want to be the latest super hero, or a character in a movie they just saw. It's a little much for mom to make at home. Sometimes they even want multiple costumes, so they don't have to show up at different parties in the same costume. Store bought costumes though, are not only expensive for one night of wear, but they lack imagination and creativity. More and more people seem to be going back to wearing homemade costumes. The more creative, the better!

There are many benefits to making your own costume. For one, it's normally a lot cheaper than buying a costume. A lot of times, you can use stuff you've already got laying around the house.  Making your costume requires some imagination and creativity, things a lot of kids these days are missing out on.  It's something that kids and parents can do together, and time together is something else we don't get a lot of.  Homemade costumes are better for contests too! People are more impressed with something you made yourself, and kids are more proud to wear it.

All you have to do to find some great homemade costume ideas is to look around your own home. Do you have sweatshirts and sweatpants? That's half of a costume right there! There's lots of things you can do depending on what color they are. Are they white? Add some spots and become a Dalmation.  With some wings and a halo you're an angel! If your clothes are green, find an old headband and hot glue some "petals" onto it cut out from fun foam. It's a flower! A brown outfit and and you can be a dog, or my personal favorite, a clothesline! My family has won contests with that one! All you need is two people, matching sweats, some rope, and some funny underwear to hang on it!

Some other great ideas you can do with stuff you already have is a tired housewife/mom costume, or a hobo, or a gypsy. You can just throw together a bunch of remnants from Halloweens past and just be "Halloween". Whatever you do, it's bound to be a hit with a little effort and imagination.
